PROPER HOT AND COLD HOLDING TEMPERATURES
Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Provide mechanical refrigeration for all potentially hazardous food items to ensure cold holding temperature is maintained at 41 degrees Fahrenheit or below. 1. Observed small containers of sliced fruit, cheese, and diced vegetables at 47 degrees Fahrenheit on preparation table. Items were stored in a container that was stored on ice. Per operator, food items were prepared less than one hour ago. Food items are held on ice more than two hours then reused at a later time for the second service. C
