Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
A-Observed box of cat litter in basement and evidence of cat scratching boxes in upstairs storage area. Cat is not permitted in food facility, if cat is present, please bring cat to another place to live other than a restaurant. B-0Observed one dead cockroach under ware washing machine, and one dead cockroach on adhesive board. Please ensure facility is free from vermin. Please discuss with pest control operator (documentation of monthly pest control provided) the feasibility of using an IGR, increased frequency of treatment, and role of sanitation in eliminating vermin.

What Was Observed
Observed 2 containers of cooked mixed vegetables measuring 79F, and a tray of steamed greens. Per PIC, there items were out for the lunch rush and had been out of temperature for approximalty 1 hours. They were immediately transferred to working refrigeration, corrected on site. Please hot hold potentially hazardous food above 135F or cold hold below 41F at all times. Do not store potentially hazardous food it of temperature.
