Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed mouse droppings in a few locations: on the floor downstairs behind/beneath the wire shelves with food containers and the closed boxes of almond & soy milk, on the floor downstairs beneath the wire shelf adjacent to the water heater, on the floor downstairs beneath the linen shelf to the left of the walk-in cooler, and on the floor behind the refrigerator/freezer in the dry storage room. Clean the droppings, sanitize the affected areas, and continue regular pest control at the facility.

PROPER HOT AND COLD HOLDING TEMPERATURES
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured half and half at 56F and 62F, and milk at 54F, all held out on the counter at room temperature. These had all been out for roughly an hour. The operator immediatley moved these foods to the cooler below.

Dirty wiping cloths spread millions of bacteria across surfaces. Cloths used on raw meat spread Salmonella and E. coli throughout kitchen.
Observed a wet wiping towel out on the counter at the front service counter. Store all wiping towels in a sanitizer solution when not in use.

Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
Observed employee coats handing on a food shelf immediatley adjacent to several foods inside the dry storage room. Observed an employee shirt directly atop some foods on the same shelf. Store all employee personal items in a dedicate space away from food, utensils, or food containers.
