Routine inspection revealed live roaches on monitoring trap at bar under wood shelving, obstructed handwash sink in kitchen with compost can blocking access, and improper cooling of multiple sauces and shrimp exceeding safe temperatures. Inspector noted unapproved unfinished wood shelving and numerous gaps requiring caulking to prevent vermin harborage, with follow-up inspection scheduled for November 13, 2025.

What Was Observed
caulk all cracks and crevices with approved sealant or caulking. any unfinished wood on shelving should a) be replaced or b) apply an epoxy or coat of clear waterproof paint to any unfinished wood throughout kitchen or bar. this type of wood is unapproved as it is not durable, easily cleanable or non porous. caulk all cracks on underside of bar, where FRP meets floor/walls, gaps between FRP and walls. anywhere that is big enough for a roach to hide needs to be caulked.
