Grab-and-go meals were found at 56°F, above the safe cold-holding temperature of 41°F. The meals were immediately relocated to a working cooler. Hot water measured 120°F, hand sinks were properly stocked, no vermin evidence was found, and general sanitation was satisfactory.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Observed grab-and-go meals to measure 56F at time of inspection. Per PIC, they had been in the cooler for less than 4 hours. COS: meals were relocated to a working cooler to cool rapidly to 41F or below
