Inspector's Report

Inspector found food debris on a knife and magnetic strip, which was corrected immediately. Debris was also found where the prep sink meets the wall, cleaned on site. The facility must repair hot water temperature at the prep sink to reach 120°F and provide proper air gap for drainage within 7 days.

Without sanitizer, wiping cloths become bacteria breeding grounds. One contaminated cloth can spread pathogens to every surface it touches.
1) REPAIR the food preparation sink to dispense hot water at 120F. Food preparation sink hot water measured at 105-115F. All other sinks reached required water temperatures. 2) PROVIDE a minimum 1 inch air gap for the pipe draining from the prep sink into the floor sink below that was observed to be sitting inside the floor sink improperly.
