Inspector found issues including: PROPER HOT AND COLD HOLDING TEMPERATURES; PREMISES; PERSONAL/CLEANING ITEMS; VERMIN PROOFING.

PROPER HOT AND COLD HOLDING TEMPERATURES
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed perishable foods being stored in the front counter area, mainly pasteurized milks and juices, being stored in the 1-dr & 2-dr under counter counter fridges that were holding ambient temperatures ~50*F. Observed perishable foods used to make sandwiches such as sliced tomatoes, cheese, etc. with internal temperatures of ~60*F. Per PIC, the 3-dr prep-top being used was stored was just repaired at 10:00 am. It was instructed that all PHFs shall be discarded at the end of the shift.
