Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Observed a bag of chicken in a plastic container left at room temperature on the prep table. Per person-in-charge, they are thawing the chicken. COS - education provided. bag of chicken move to refrigerator.
