Inspector's Report
During routine inspection, inspector discovered cockroach activity under the sushi bar sink and a line of ants along the ceiling behind the bar. Additional violations included missing paper towels at handwash station, deteriorated equipment gaskets, and improper storage of employee beverages in food prep areas. Licensed pest control treatment and follow-up inspection required.

Cockroaches and ants present in facility
Why This Matters
Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Observed one cockroach between built in counter and cabinet under hand wash sink at sushi bar. Observed one cockroach on adhesive board under this sink. Observed line of black ants traveling along ceiling and edge of wooden paneling behind sushi bar. Please work with licensed pest control to eliminate vermin from facility, clean and sanitize affected areas. Discuss feasibility of ULV forging as well as use fo an IGR to eliminate cockroach activity.

Why This Matters
Household equipment cannot withstand commercial use and harbors bacteria in cracks. Latex gloves cause severe allergic reactions in sensitive individuals.
What Was Observed
Observed deteriorated gasket on prep top cooler, observed metal bowl being used as a scoop, observed bare wood shelving. Please seal any wood to render surface non-absorbent.

Why This Matters
Missing handwashing supplies forces employees to skip handwashing. Studies show only 31% of workers wash hands properly when supplies are inadequate. Spreads norovirus to hundreds.
What Was Observed
Observed no paper towels at hand wash station near entrance to kitchen, please ensure hand wash stations are supplied and accessible at all times. Ensure soap, paper towels, warm water are available.
