Inspector found expired food safety manager and food handler cards, grease buildup throughout kitchen including ventilation hood and fryers, and missing consumer advisory on menu for raw foods. Equipment maintenance issues included cracking refrigerator gaskets with black growth and dust-covered cooling fans. Multiple cleaning violations noted under cooking equipment, dishwasher surfaces, and throughout kitchen floor areas.

What Was Observed
Observed a sauce in the hot-holding unit at room temperature. The hot holding unit was just turned on not too long ago. The sauce was made three hours before. COS- Operator relocated the sauce pot to the stove to be reheated to 165 F. Inspector reminded the operator and employees that the hot-holding unit is not used to heat items. The stove must be used to heat the PHFs to 165 F for at least 15 seconds before placing it in hot holding.
