Why This Matters
Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
What Was Observed
Observed green salsa in a 5 gallon uncovered plastic container filled up to brim measured at 61 F inside the walk-in cooler. Per person-in-charge (PIC) salsa was cooked an hour prior and they are cooling it and an ice wand was used to rapidly cool before transferring to walk-in cooler. COS - education provided. PIC transferred the salsa to a shallow stainless steel pan to continue cooling inside the walk-in cooler.
