Reinspection found warewashing facility violations corrected with proper chlorine test strips obtained and wiping cloths properly stored in sanitizing solution. All three sink stoppers documentation received by inspector.

Improper dishwashing spreads pathogens across all dishes. Hepatitis A survives on improperly washed dishes for weeks. Causes recurring outbreak cycles.
What Was Observed
Obtain chlorine test strips. Ensure chlorine sanitizing solution measures 100ppm chlorine at 3-compartment sink and in sanitizer bucket for wiping cloths. OBTAIN AT LEAST 3 STOPPERS FOR 3-COMPARTMENT SINK, SO THAT ALL SINKS CAN BE FILLED SIMULTANEOUSLY. Facility is currently using wads of plastic wrap.
