PROPER HOT AND COLD HOLDING TEMPERATURES (CORRECTED ON SITE)
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured cream cheese at 46F and milk at 45F on the top portion of the food preparation cooler. Measured turkey at 47F, ham at 47F, tuna salad at 46F, jalapeño & cream cheese at 46F, almond milk at 64F, half & half at 49F, and a gallon of milk at 50F. All foods except the gallon of milk had been there for over four hours and were discarded. The gallon of milk was moved to a working cooler in the back room. Measured turkey at 44F and and bacon at 43F inside the left side refrigerator/freezer in the back room. Allowed the operator to turn down the cooler temperature to bring foods into compliance.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed minor mold (or other brown colored material) on the left side interior wall inside the ice machine. Clean the mold. 114117, 114125(b), 114141 - NOTES Note: seal, pasteurized milk was measured at 46F inside the 1-door, glass-faced True cooler in back. Sealed dairy in the cooler is OK (45F or below, with a thermometer accuracy of 2F) at a measured 46F. Unsealed product was moved to a working cooler. Note: the facility has a dial-type probe thermometer. Obtaining a digital stem thermometer for measuring food temperatures is strongly recommended.
