Inspector's Report

Routine inspection found mouse droppings under wire racks and storage areas, cold water unavailable at front hand sink, and empty paper towel dispenser. Rice scoop stored improperly in room temperature water, and ice machine needs repair. Follow-up required by December 2, 2025.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed old mouse droppings on the floor underneath the wire racks, as well as in the storage/office area. Clean/sanitize all affected surfaces as well as the wire racks, what's being stored on their shelves, etc.. Per PIC, pest control services are being done but is unaware of the company name.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed in use rice scoop being held in room temperature water. When ice machine is repaired, store in plain ice and wash/sanitize container and scoop every 4 hours.
