What Was Observed
1. MAINTAIN sanitizing solution at the correct concentration during all active food preparation. -Observed sanitizing bucket did not contain any measurable sanitizing concentration at time of inspection during active food preparation. Corrected on site - Per Inspector's request, chlorine bleach sanitizing solution was made to 100 ppm. 2. ALWAYS allow chlorine bleach sanitizing solution of 100 ppm to contact dishes for at least 30 seconds when washing, rinsing, and sanitizing. -Observed employee demonstrate how to properly wash dishes; employee did not contact dishes in sanitizing solution for at least 30 seconds. What Was Observed
1. IMMEDIATELY provide warm water of at least 100F for all handwashing sinks. -Observed the handwashing sinks were slow to reach 100F and the handwashing sink closest to the food preparation sink is measuring a maximum temperature of 95F when 100F is required.
