Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
A-Hot holding unit was holding yellow curry at 133.7F, curry was re-heated to 165F. Plese ensure hot holding unit is holding PHF at 135F or above, and that any re-heated food is re-heated to 165F prior to serving. B-Prep top was holding at 44.9F. Shrimp, noodles, meat all 44.7 to 44.9. Thermostat adjusted at time of inspection. Please ensure refrigerator is holding at or below 41F. Food safety guide and sticker provided.
