Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed cooked beef double stacked at flip top preparation cooler across from cooks line to measure 45F. Per PIC it was placed there less than 4 hours prior to inspection. COS: beef was relocated to bottom portion of preparation cooler to cool to 41F or below
