Inspector's Report

Inspector found multiple sanitation issues including a handwash sink lacking soap, sanitizer buckets with 0ppm concentration, and frozen strawberries being improperly thawed in dishwashing sinks. Staff corrected several violations on site including preparing fresh sanitizer solution and relocating food items. Follow-up inspection scheduled for October 9th.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed two sanitizer buckets filled with 0ppm chlorine concentration santizer solutions were available under the 3 compartment sinks. Staff made two 100ppm chlorine sanitizer solutions for the wiping cloths.

Food preparation in dishwashing sink
Raw chicken drips contaminate everything below with Salmonella and Campylobacter. Cross-contamination causes massive outbreaks affecting hundreds.
Observed a metal colander with frozen strawberries in the first compartment of the 3 compartment sink and a bag of frozen whole strawberries in the second compartment of the 3 compartment sink. The staff relocated the frozen strawberries to the prep sink.

Missing handwashing supplies forces employees to skip handwashing. Studies show only 31% of workers wash hands properly when supplies are inadequate. Spreads norovirus to hundreds.
Observed the back hand sink adequately supplied with hand soap and paper towels, however the hand sink located in the middle adjacent to the metro rack lacked hand soap.
