Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Observed pastrami in hot holding to measure 107F. Per PIC, it was placed in the hot holding unit less than 2 hours prior to inspection. Ensure all food in hot holding measures a minimum of 135F.
