Inspection found improper sanitization during warewashing and missing sanitizer solution strength. Food contact surfaces lacked proper sanitization, fruits had unwashed stickers, and warewash sink was missing a plug. All violations were corrected on site with education provided.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed lack of sanitization when active warewashing in kitchen and chlorine bleach sanitizing solution was less than 100 ppm when sanitizing dishes. Corrected on site - education provided, employee retrained, and sanitizing solution remade to 100 ppm.
