What Was Observed
Observed fresh clams without a tag inside the meat walk-in. The operator could not locate a tag or identifying which lot the clams belong to. Maintain tags with live shellfish until the shellfish has been completely sold. Then maintain the tag onsite for 90 days. Because the clams could not be matched to a shellfish tag, they were discarded.
