Inspector found improperly cooled coconut soup at 48°F that was voluntarily discarded (approximately 5 gallons). Raw beef and chicken were stored together on same shelf in freezer. Equipment issues included damaged refrigerator gaskets, cardboard shelf liners, and missing probe thermometers.

What Was Observed

Why This Matters
Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
What Was Observed
Approximately 5 gallons of improperly cooled coconut soup discarded (found at 48F degrees) prepared yesterday or earlier, PIC no sure when it was prepared.
