Why This Matters
Without hot water, dishes cannot be sanitized and hands cannot be properly washed. Allows survival of viruses and bacteria that cause foodborne illness.
What Was Observed
Measured hot water at 80F at the right side sink (formerly a handwash sink, now a prep sink) on the back counter adjacent to the espresso machine. Provide hot water of 120F to the sink. If the sink will return to being a handwash sink, warm water of between 100F and 108F is acceptable.

What Was Observed
Observed an open box of frozen meat patties on the floor of the walk-in freezer located inside the upstairs walk-in cooler. Store all foods at least 6" above the floor. Observed boxes of canned soda and bags of potatoes stored beneath unshielded sewer lines in the room at the left/south side of the midway landing going down the stairs. Either cease storing foods beneath unshielded sewer lines or shield the sewer lines.
