Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Cooked noodles kept out of temperature control measured 79F. Per person-in-charge, these were taken out of temperature control less than 4 hours ago. Noodles were immediately moved to a refrigeration unit. Ensure all potentially hazardous food measures 41F or lower. Contact inspector if interested in using time as a public health control (TPHC).
