Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Maintain chlorine sanitizer concentration at 100ppm in buckets at all times for proper sanitizing of food contact surfaces. Observed all buckets at 0ppm at front and back of house food preparation areas.

Store all raw animal foods separate from other raw animal foods and ready to eat foods to prevent cross contamination. Observed bags of frozen raw chicken stored above frozen dough products.
