Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Mouse feces observed under shelf in back storage area. Immediately contract with a licensed pest control professional to eliminate rodents from premises. Clean and sanitize all areas affected by rodent feces. Maintain pest control receipts on site for SFDPH review. Per person-in-charge, regular pest control service is coordinated by building management, and no records are in this facility's possession at time of inspection. Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
No active cooking taking place at time of inspection. Ambient temperature of refrigeration unit on left side of cook's line (facing ventilation hood) measured 64F, per display type thermometer in unit. Bloated can of crab claw observed in this unit. Can was discarded, along with all other potentially hazardous food (PHF) in this unit. STORE ALL POTENTIALLY HAZARDOUS FOOD IN A DIFFERENT UNIT, CAPABLE OF HOLDING PHF AT OR BELOW 41F, UNTIL THIS UNIT IS REPAIRED OR REPLACED.

What Was Observed
Low temp mechanical dishwasher in back of house kitchen, and at bar, did not dispense chlorine sanitizing solution. Repair both low temperature dishwashers to dispense 50ppm chlorine sanitizing solution. Use three compartment sink to sanitize all multi-use utensils until dishwashers are repaired. ----- Detergent bottle was empty at low-temp mechanical dishwashers in bar area. Replace detergent. --------------------------------------- REINSPECTION 10-2-2025: Dishwasher in back of house has not been repaired. Dishwasher at bar area has been repaired, but dispenses approximately 200ppm chlorine solution as opposed to the proper 50ppm chlorine solution. Facility had chlorine test strips but did not have the reference guide to determine proper concentration. Person-in-charge took photo of inspector's reference guide.
