Reinspection revealed multiple temperature control violations with shrimp, imitation crab, eel, and California rolls stored at room temperature (55-70°F) since 10am, with shrimp voluntarily discarded. Staff was observed improperly thawing frozen fish at room temperature and using handwash sink for food prep. Sanitizer concentration and handwashing compliance issues persist from previous inspection.

What Was Observed
Observed Sanitizer bucket measuring 200 ppm of chlorine. ENSURE chlorine concentration stays 100ppm. Observed dirt accumulated inside interior of ice machine by the deflector panel. Observed the Employee cleaned the knife with wiping cloth and used the same cloth for wiping table. COS - Operator was asked to dilute the solution. Employee was stopped and asked to wash the knife.

What Was Observed
Observed frozen fish being thawed in the reach in cooler in a bag that says keep frozen. ENSURE the fish is removed from package before thawing in cooler to avoid botulism bacterial growth for fish being thawed in a commercially sealed bag that states KEEP FROZEN. COS - Fish was immediately removed from packaging and placed in an approved container to continue thawing.
