Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed freshly cut lettuce on a plastic container covered by Saran Wrap left on top of the bag of rice at room temperature. COS - container of lettuce relocated to walk-in cooler.

Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Observed 4 big cylindrical lamb meat wrap in plastic inside the prep sink without running water. Per person in charge they are thawing the lamb meat since around 2 hours ago. COS - education provided. Lamb meat move inside the walk-in cooler.
