Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed mouse droppings on the floor beneath the south wall food preparation table in the downstairs kitchen. Observed mouse droppings on the floor at the west end of the downstairs bar. The operator stated they have pest control twice per month. Clean the droppings, sanitize the affected area, and continue regular pest control at the facility.

Without hot water, dishes cannot be sanitized and hands cannot be properly washed. Allows survival of viruses and bacteria that cause foodborne illness.
Observed inadequate hot water flow at the handwash sink in the downstairs kitchen. Provide adequate hot running water under pressure at the sink. Observed the entire left-side faucet assembly to be missing from the three-compartment sink downstairs such that water cannot be provided to the left compartment. Replace the missing faucet assembly.

Without sanitizer, wiping cloths become bacteria breeding grounds. One contaminated cloth can spread pathogens to every surface it touches.
Observed a leak from a hidden pipe emerging from the edges of a ceiling panel in the dry storage area downstairs. The leak is being caught be a few buckets/bus boxes. Repair the leak. Repair the ceiling as needed.
