On this date the following violations have been corrected: -food handler cards maintained onsite -handwashing sinks are accessible and available for handwashing -only one small container of pupusa dough observed in use for food prep, other larger containers kept in walk in cooler. -operator described proper cooling methods to inspector. No active cooling observed at the time of the inspection. -Observed sanitizer bucket prepared with approved sanitizer -Did not observed any signs of cockroach activity -Observed proper food storage order in walk in cooler and other cooler units -Cockroach bait gel has been removed from above food prep areas -Observed clean equipment surfaces -Observed the gap in base cove tile near floor sink to be repaired -Observed the metal sheet at front server area to be repaired Food prep sink location under review Replaced the yellow conditional pass placard with a green pass placard on this date.
