Multiple violations found including improper food holding temperatures, pest activity evidence, and equipment issues. Temperature violations with pooled eggs and various proteins were corrected on-site. Mouse droppings and dead insects were observed in storage areas.

Why This Matters
Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Observed a few dead insects that could not be identified by the inspector (not cockroaches or flies) adjacent to an open bag of barley and several closed bags of seeds and similar foods at the bottom of a bus bin. The insects posed no visible threat to the food. The operator immediately moved the foods and cleaned the bus bin and dead insects inside. Observed a few mouse droppings on the floor to either side of the small, white chest freezer downstairs. Clean the droppings, sanitize the affected area, and continue regular pest control at the facility. Observed a few very old mouse droppings on some plates on a shelf behind the bulk flour and sugar bins downstairs. These plates had not been used in a long time, and the droppings to not pose a risk to food safety. Clean the droppings from the plates and continue regular pest control at the facility.

Observed some grease accumulation on the ventilation hood both above and below the filters such that the grease could potentially leak upon foods being prepared below. Clean the hood and it's filters. Observed gaps between a few of the ventilation hood filters. Reseat the hood filters to eliminate the gaps between them.

What Was Observed
Measured pooled eggs at 58F and pooled egg whites at 57F held out at room temperature on the cooks' line. These foods had been out at room temperature for just over an hour and were immediately moved to a cooler. Measured shrimp at 49F, scallops at 52F, beef at 52F, lamb at 49F, chicken at 49F, fish at 47F, shrimp at 54F, and cooked pork at 61F. These foods had been on the cooler for just over an hour and were moved to the bottom of the cooler where foods held at 41F or below.
