Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed lack of sanitation solution at the end of the cycle of the dishmachine. Lack of test strip to check the sanitation solution. COS - dishmachine provided right amount of sanitizer 50 ppm chlorine after priming sanitizer.
