Observed 1 raw shell egg on top of cut mushrooms in a well inside a prep cooler. COS - staff immediately removed the raw shell egg. Observed raw chicken stored above the bag of green peas and other raw meat inside the reach in freezer. COS - raw chicken relocated at the bottom of freezer.

Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Observed about 4 packs of raw lamb chops left at room temperature in the kitchen. Per staff, they are thawing the lamb chops. COS - education provided. lamb chops move to refrigerator.
