Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Observed chicken left thawing under counter, please thaw using approved methods. Chicken moved to refrigerator.

Improper storage allows pest access and temperature abuse. Food on floor contacts contaminated water during cleaning. Expired foods cause illness.
Observed open containers of dry goods (panko, flour) stored in wooden exterior storage area lacking approved finishes. Please containerize any food stored in exterior, and do not store nay open food (food where origional package is opened) in areas without approved finishes.

Kitchen hand wash sinks had no hand soap at ime of inspection. Bar had hand soap, hand soap was provided for kitchen during inspection. Please ensure all hand wash stations are supplied and accessible at all times.
