Routine inspection found expired food safety manager certification and multiple food safety violations. Raw eggs stored at unsafe temperature of 73°F, hand sink missing paper towels, and sanitizer buckets measuring 0 ppm chlorine. Most violations were corrected on site including temperature control, sanitizer concentration, and hand sink hot water availability.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed two (2) sanitizer solution buckets to measure 0 ppm at time of inspection. COS: chlorine was added to measure 100 ppm chlorine
