Routine inspection found multiple violations requiring follow-up. Critical issues included obstructed handwashing sink and improper cold holding temperatures (43-44°F). Additional violations involved expired food handler certifications, dirty equipment surfaces, and poor floor/wall maintenance.

Missing handwashing supplies forces employees to skip handwashing. Studies show only 31% of workers wash hands properly when supplies are inadequate. Spreads norovirus to hundreds.
Observed only hand sink in kitchen area obstructed with a work table storing a steam table. Immediately discontinue obstructing/blocking the hand sink. Hand sink must always be accessible for hand washing at all times. Relocate steam table to previous location.

Proper Hot and Cold Holding Temperatures
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed some potentially hazardous foods (PHFs) cold holding in the prep top unit measuring 43-44 F. Prep top lid was kept open while no food assembly or prep was occurring. Keep lids closed while no active assembly or prep is happening.

Observed the gaskets on the reach in equipment in slight disrepair. Some were compressed, had food residue in the crevices or beginning to crack. Repair or replace gaskets, the refrigerators would work more efficiently and have less temperature fluctuation with new gaskets.
