Follow-up inspection found most violations from 8/13/25 routine inspection corrected. Staff unable to demonstrate sushi rice pH testing procedures and shellfish tags not maintained on file for required 90-day period. Green placard issued with requirement to submit HACCP plan to CDPH for approval.

Staff couldn't demonstrate how to conduct a sushi rice pH test. Train all sushi prep staff on how to properly conduct a sushi rice test. Per PIC, they are still waiting on some equipment used to test the rice. Maintain logs onsite for future review.
