Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
WITHIN 24 HOURS: OBTAIN the services of a licensed pest control operator to treat the facility for cockroaches - have them perform a crack and crevice treatment and SEND a copy of the report to Katie.dea@sfdph.org within 24 hours. Why This Matters
Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
What Was Observed
SEAL all cracks/gaps/crevices in the cabinetry along the back wall of the front prep area to ensure that there are no possible harborage or entry areas for cockroaches - this area was observed to have some cracks under the front hand sink and in the cabinetry below. Do NOT use spray foam.

IMMEDIATELY: 1) ENSURE warm water is kept ON at all hand sinks at all times. - Observed hot water faucet OFF at hand sink in back prep area. COS BY REINSPECTION: 1) PROVIDE cold running water at the food preparation sink. - Only hot water was available at the food preparation sink. Cold water faucet did not dispense any water. 2) PROVIDE a minimum 1 inch air gap for the drainage pipe draining from the ice cream dipper well into the floor drain below, that was observed to be improperly sitting in
