What Was Observed
Observed frozen raw chicken stored on top of frozen cooked chicken/shrimp. COS - raw chicken move to a smaller freezer. This smaller freezer shall be the dedicated storage for raw meats.

Observed Quatenary sanitizer in the cook line is below 200 ppm. Facility uses 3 compartment 3rd compartment in cook line as sanitation bucket. Per staff the 3 compartment sink is used to dump/drain the liquid from cooking. Washing of fruits/vegetables is done on this 3 compartment sink.
