Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Observed old rodent droppings on the floor underneath dry storage shelves in dry storage room and on the floor behind front bar refrigerators. Clean and sanitize affected areas and continue routine pest control services. Seal opening in ceiling in corner of dry storage room.

What Was Observed
Observed chicken in flip top preparation cooler at cooks line to measure 52F. Measured ambient temperature of cooler at 54F. Per PIC, all food in cooler was placed 1 hour prior to inspection. COS: all PHF was relcoated to a working cooler at 41F or below

Why This Matters
Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.

- Observed frozen salmon to be prepackaged in ROP (reduced oxygen packaging) to be thawed while in ROP. Observed package to state "remove from packaging and thaw under refrigeration".
