Routine inspection revealed expired food safety manager certification and lack of sanitizer bucket during active food prep. Additional violations included mold-like growth in cooler door gaskets, improper plumbing air gap under three compartment sink, and food debris on floors near warewashing area. One violation corrected on site when employee provided proper sanitizer bucket.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed no sanitizer bucket setup at the start of the inspection while food prep was occurring. PROVIDE a sanitizer bucket with an approved sanitizer and clean and sanitize food prep surfaces. COS - Employee provided a sanitizer bucket with at least 200ppm quaternary ammonia.

Dirty surfaces harbor pests and serve as bacteria reservoirs. Accumulated grease and food debris attract cockroaches and rodents.
Observed debris and mold like growth in prep cooler door gaskets. CLEAN and SANITIZE the door gaskets. Clean more frequently to prevent the accumulation of debris on equipment surfaces.

Without sanitizer, wiping cloths become bacteria breeding grounds. One contaminated cloth can spread pathogens to every surface it touches.
Observed drain line extending far into the floor sink under the three compartment sink. CUT/RAISE the drain line to maintain at least a 1" air gap above the flood rim of the floor.
