Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured turkey at 47F, soft cheese at 47F, and hummus at 47F. Cold hold potentially hazardous foods at/below 41F. All foods were moved to the cooler approximately 3 hours ago. The operator immediatley moved these foods to a working cooler inside the facility next door that is owned by the same owner.

Why This Matters
Without hot water, dishes cannot be sanitized and hands cannot be properly washed. Allows survival of viruses and bacteria that cause foodborne illness.
What Was Observed
Observed inadequate hot water flow to the handwash sink in the bar. The hot water does not provide enough flow to enable washing hands at water between 100F and 108F. Increase the flow to provide adequate hot running water under pressure to the sink. Observed an inoperable cold water handle at the left side handwash sink in the women's restroom. Repair the inoperable handle to provide cold running water under pressure. Measured warm water at 75F at the men's restroom handwash sink. Provide warm water of between 100F and 108F at the sink.
