Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed cooked potato on shelf at end of cook line at 46F, batter on counter, soft (not crispy) bacon above range, and pasturarized eggs at 56F (with infrared). Items had been out of temperature for less than 2 hours during morning rush and were relocated to refrigerator immediately upon inspectors request. Please keep PHF in refrigeration at or below 41F, or above 135F. Food safety guides in English and Spanish provided.
