Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed one nymph cockroach along wall of hand sink in downstairs preparation kitchen. Observed one live cockroach on floor in downstairs preparation kitchen under preparation sink. Observed cockroach egg sacs on floor next to boiler room. Observed one dying cockroach on floor underneath dish racks in warewashing area in main kitchen. Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed the following cold holding violations in the walk in cooler: - duck breast at 47F - cooled rice at 48F Measured ambient temperature of the cooler to be 50F. COS: by the end of the inspection, ambient temperature of the walk in measured 41F. Ensure door of walk in is completely sealed. Install a door sweep.
