Proper Cooling Methods
Why This Matters
Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
What Was Observed
Mixed bean salad made with room temperature beans was tightly covered at 52F. Macaroni salad at 55F stored in deep metal bucket with lid. Foods being cooled in deep, plastic, and/or covered containers instead of shallow metal pans. Education provided on rapid cooling methods.
