Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured garlic in oil in a plastic container left in room temperature on top of prep table at 61 degrees Fahrenheit. COS - staff moved garlic in oil to prep cooler.
