Routine inspection found raw eggs improperly held at room temperature for 2 hours and rodent droppings behind kitchen equipment. All violations were corrected on-site through immediate disposal, cleaning, and sanitization. Additional maintenance issues include organic growth in hand sink and deteriorated caulking in 3-compartment sink.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
CLEAN and SANITIZED areas observed to have rodent droppings behind the low boy cooler and underneath the shelving in the kitchen. COS - areas affected by rodent droppings cleaned and sanitized during inspection.

Observed 2 trays of raw shell eggs measured at 73 degrees Fahrenheit. Per staff eggs were put out at room temperature about 2 hours ago. COS - education provided. staff moved the raw shell eggs inside the low boy cooler.
