Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed 4 boxes of eggs stored out of refrigeration in rear storage room. Eggs were at 65F as verified with probe thermometer, and bore label on box keep refrigerated. Per employee eggs were delivered approximately 4 hours earlier. eggs immediately moved to working refrigeration for cold holding. Do not store potentially hazardous foods out of temperature control, hold below 41F or above 135f. Corrected on site.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Per PIC service provider was at facility on Monday. Observed no detectable sanitizer in sanitizer bucekts, sanitizer dispenser at 3 basin sink, or ware washing machine. Please add bleach to sanitizer bucekts. Please use 3 basin sink and bleach for sanitizer step of ware washing. Please have sanitizer dispenser, ware washing machine serviced within 24 hours. Please re-sanitize all dishes used this week. Train staff on use of sanitizer bucekts and test strips. Sanitizer bucekts are set up prior to start of food prep each day, changed every 4 hours or as needed. Please train staff to test sanitizer level in ware washing machine daily.
