Staff member was unfamiliar with sanitizer testing procedures and switched tasks without proper handwashing. The sanitizer dispenser was not working and sanitizer bucket was empty, but was corrected during inspection with technician repair scheduled.

Why This Matters
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
Facility sanitizer dispenser was not working at time of inspection. Sanitizer bucket had no sanitizer. PIC contacted service provider for sanitizer dispenser repair. Technician was slated to arrive within 15 minutes of inspection concluding.

Observed staff member switch from trouble shooting sanitizer dispenser to returning to food service, touching clean "to go" containers without washing hands or changing gloves. When asked to wash hands and change gloves, staff members began to change gloves without washing hands.
