Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed staff just prepared the sanitation solution with 100 ppm chlorine at the beginning of inspection and facility had been operating for 30 minutes. COS - education provided. Sanitation solution must be set up before starting food operation and all food contact surfaces shall be sanitize prior to preparing food.
